5. 滾得棧 Steamboat is a must visiting HK, this restaurant is at Electric Road around Tin Hau MTR, fairly easy to find, just look for 80 Electric Road. Again, call and make reservation is better Ph # 2929 4999. Recommend you choose the following items, beef, fish paste, bone marrow, coral clam, pig intestime, tong hole (vegi). For soup base, you can try pig stomach with peppar or milder version depending on your ability to take spicy food.

4. 鹿鳴春飯店 For sharks fin and crab meat prepared using the best method and ingredient, you cannot miss the Spring Dear Restaurant in Tsim Sha Tsui. This restaurant serves shark's fin in a pot and the taste is out of this world, they are famous for Peking Duck but the two dishes I really love is : Gai Dun Chee (shark's fin with chicken) and Choi Bon Hai (crab meat fried in runny eggs). It is at 42 Mody Road, tell taxi driver to go to "More Day Dole Luk Ming Chuan". Again, reservation is a must. Ph # 2366-4012

3. 避風塘興記 The Typhoon Shelter used to be a famous place where you board small junks to spend the late evening enjoying the lights of HK and sample seafood, due to health concern, this has been discontinued. The original "chef" on these junks has moved on land, the most famous one is Heng Kee. It serves the best noodle with Roasted Goose thigh, you have to ask for "Siu Ngor Bay Lie Fun". Another perfect food is deep fried small fish with chili, "Jiu Yim Lai Maun", it is GOOD. To get there, exit at Jordan MTR station head for 4 Seas plaza exit, once at street level turn you can see across the street KFC. You are facing Nathan Road, turn left and walk towards the traffic light at Austin Road; cross Austin Road and walk slowly, check for a small entrance to go upstairs one level to "Bay Fung Tong Heng Gay". It is before you reach the next intersection, so, if you find yourself crossing another Road after you crossed Austin Road then you have overshot. Turn around and go back slowly to look for the rather unnoticeable entrance. Note: This place is always crowded for dinner, try to go there earlier than others, i.e. turn up at 5:45pm for dinner. 2. 利苑粥麵專家 Porridge in HK is different from SG, it is a lot more tasty and thicker they usually put dried orange skin and dried scallop into the pot and boil for a very long time until the rice opens up into cotton-like texture. The best porridge is served in a old eatery in Causeway Bay, it is call Lei Yuen but don't get it mixed up with Lei Garden which sounds identical. To get there, take MTR to Causaway Bay station, exit for Sogo department store. Sogo is sandwiched between a small street and the busy road where the electric tram runs. Lei Yuen is along the small street and facing the exit from Sogo. There is only one eatery facing the "back" of Sogo, so it should be quite easy to find. The most amazing porridge served in this place is the pig liver and kidney porridge with egg, tell them you want "Yiu Yun Zhiok Gar Dan". Beware the setting is not glamorous but the food is outstanding. Their wonton mein is good also, but their porridge is amazing.

1. Maxim Palace at City Hall in Central has the best dimsum in HK, to avoid long queue you must be there before 11am. The most amazing food is their Steamed Carrot Cake (not the same as the fried ones in SG), just order from the staff because they may not appear on the trolleys. For dessert, nothing can beat the steamed bun filled with runny yellow liquid made from egg yolk and sweet creamy filling, just ask for "lau sar lie wong bao". They do not allow reservation.
